Listeria is possibly the most dangerous and challenging microorganism that food manufacturing facilities face. It does not change the taste, smell or appearance of food, can grow at very low temperatures, and can cause serious illness or even death if consumed, so controlling Listeria in food production is very important. After completing this course, learners should be able to recognize the hazards of Listeria, and identify methods for controlling it in a food manufacturing facility.
